Martha’s Green Sauce Enchiladas

↳

SO good!

This recipe is good as is! No mods. Only tips. I like to use half pepper jack/half cheddar – but that can make it more expensive to make. If you find you have leftover chicken when you are done assembling your enchiladas, just scatter it over the top before you add the cheese. This is pretty inexpensive to make. I bought chicken for $4.99/lb which is the more expensive Bell and Evans brand. But you could prob get a rotisserie for $8 and shred the whole thing and be just fine. You could also cut the recipe in half and still probably end up with 2 meals.

If your tortillas are relatively new/fresh, you probably don’t have to nuke them with the paper towel. It also doesn’t really matter if they crack during assembly because this is a casserole.

To help with food cost, plan to make something else with the tortillas and extra heavy cream before they go bad. Otherwise this is a really efficient recipe.

Here’s the recipe!
